Sweet And Sour Pork

  1. In large skillet, brown pork on all sides in shortening. Meanwhile, drain pineapple, reserving juice.
  2. Combine brown sugar, cornstarch and salt.
  3. Stir in reserved pineapple juice, water, vinegar and soy sauce.
  4. Remove browned meat from skillet.
  5. Blend cornstarch mixture into pan drippings.
  6. Cook, stirring constantly, until clear and thickened.
  7. Add meat to sauce and cook, covered, over low heat until meat is tender (about 45 minutes).
  8. Add pineapple, green pepper and onion.
  9. Cook 3 minutes. Serve over cooked rice.
  10. Pass additional soy sauce.
  11. Makes 4 to 6 servings.
