Simple Sweet Potato Casserole Recipe

• 2 c. warm mashed sweet potatoes
• 2 beaten Large eggs
• 1/2 c. melted butter
• 1/3 c. lowfat milk
• 1 teaspoon vanilla

1. Mix till smooth with electric mixer.
2. Spoon into 2 qt SHALLOW casserole.
3. Cover with topping.
4. Bake 30-45 min at 350 or possibly till warm and lightly browned.
5. Serves 6-8.
