BIG Farmer Style Brunch
- 1 tbsp butter
- 1 medium sweet onion - diced
- 1 large green pepper - diced
- 1 20 ounce bag seasoned hashbrowns / shredded potatoes - i use jimmy dean
- 3/4 lb to 1 lb. smoked ham steak
- 8 eggs
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1 1/2 to 2 cups shredded cheese your choice - i use mexican blend
- Preheat oven to 350
- Melt butter in a frying pan.
- Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned - your preference.
- Remove from heat.
- Dice ham steak - remove any fat & casing on edges.
- Grease a 13x9 casserole dish.
- Evenly press in seasoned potatoes.
- Evenly spread onions, green peppers & ham on top of potatoes.
- In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder.
- Pour on top of casserole.
- Sprinkle on 1 1/2 to 2 cups shredded cheese.
- Bake, uncovered, 40 - 50 mins - till eggs are set & top is golden brown.
- Remove from oven - let sit for 5 - 10 minutes before cutting & serving.
- Salt & pepper to taste if desired.
- This is a BIG breakfast - recipe can easily be cut in half.
- I usually make this on the weekends when I want to sleep in - breakfast & lunch served at once lol.
