BIG Farmer Style Brunch

  1. Preheat oven to 350
  2. Melt butter in a frying pan.
  3. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned - your preference.
  4. Remove from heat.
  5. Dice ham steak - remove any fat & casing on edges.
  6. Grease a 13x9 casserole dish.
  7. Evenly press in seasoned potatoes.
  8. Evenly spread onions, green peppers & ham on top of potatoes.
  9. In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder.
  10. Pour on top of casserole.
  11. Sprinkle on 1 1/2 to 2 cups shredded cheese.
  12. Bake, uncovered, 40 - 50 mins - till eggs are set & top is golden brown.
  13. Remove from oven - let sit for 5 - 10 minutes before cutting & serving.
  14. Salt & pepper to taste if desired.
  15. This is a BIG breakfast - recipe can easily be cut in half.
  16. I usually make this on the weekends when I want to sleep in - breakfast & lunch served at once lol.
