Calamari Salad

  1. To a large pot of boiling water, add lemon juice and salt.
  2. Add squid rings and cook for about 1 1/2 to 2 minutes.
  3. Drain.
  4. Combine onion, celery, garlic, parsley, olive oil, vinegar and herbs with cooked squid and serve at room temperature or cool.
