Kahlua Cookies
- 13 cup Kahlua
- 2 teaspoons instant coffee or 2 teaspoons espresso powder
- 1 (18 1/4 ounce) package vanilla cake mix
- 14 cup butter, melted
- 1 large egg
- 1 14 cups semi-sweet chocolate chips
- Preheat oven to 350; position oven rack in middle of oven; spray cookie sheets with cooking spray.
- In a big bowl, mix the kahlua and coffee powder until blended.
- Add in half of the cake mix along with the melted butter and egg; blend with an electric mixer set on medium-high speed for 1-2 minutes, until blended and smooth.
- Stir in the remaining cake mix and chocolate chips with a wooden spoon until all dry ingredients are moistened.
- Drop dough by teaspoonfuls, 2 inches apart, onto cookie sheets.
- Bake 10-13 minutes until set at edges and just barely set at center when lightly touched.
- Cool 1 minute on sheets.
- Transfer to wire racks with metal spatula and cool completely.
