Holiday Fruit and Nut Gems
- 12 ounces red and green glazed cherries, chopped
- 4 slices candied pineapple, chopped
- 1 cup pecans, chopped
- 1 cup walnuts, chopped
- 1 cup brazil nut, chopped
- 12 cup flour
- 3 egg whites
- 12 teaspoon salt
- 12 cup sugar
- 1 teaspoon vanilla
- In a bowl, combine cherries, pineapple and nuts, Add flour and mix well.,.
- In another bowl, beat egg whites and salt together until foamy, Gradually add sugar, beating until mixture is glossy and form stiff peaks.
- Fold in fruit mixture.
- Add vanilla.
- Drop by teaspon on greased cookie sheet.
- Bake at 350F for 15 minutes or until golden brown.
- Cool for a few minutes on cookie sheet, then transfer to wire rack to finish cooling.
