Holiday Fruit and Nut Gems

  1. In a bowl, combine cherries, pineapple and nuts, Add flour and mix well.,.
  2. In another bowl, beat egg whites and salt together until foamy, Gradually add sugar, beating until mixture is glossy and form stiff peaks.
  3. Fold in fruit mixture.
  4. Add vanilla.
  5. Drop by teaspon on greased cookie sheet.
  6. Bake at 350F for 15 minutes or until golden brown.
  7. Cool for a few minutes on cookie sheet, then transfer to wire rack to finish cooling.
