Chipotle Turkey Burgers Topped with Guacamole
- 2 Tablespoons Olive Oil
- 1 Jalapeno, Seeded And Diced
- 1/2 cups Red Bell Pepper, Diced
- 1/2 cups Red Onion, Diced
- 2 cloves Garlic, Diced
- Salt And Pepper, to taste
- 1 pound Ground Turkey
- 2- 1/2 Tablespoons Chipotle Peppers In Adobo, Diced
- 1/2 teaspoons Cayenne Pepper
- 1/2 teaspoons Coriander
- 1 teaspoon Cumin
- 1/2 teaspoons Chili Powder
- 1 teaspoon Worcestershire Sauce
- 4 dashes Tabasco Sauce
- 1/2 cups Grated Cheddar Or Pepper Jack Cheese
- 6 Burger Buns
- 6 leaves Lettuce
- 1 Tomato, Sliced
- 4 Avocados
- 1 Lemon, Juiced
- 4 dashes Tabasco Sauce
- 1 clove Garlic, Minced
- 1/4 cups Red Onion, Minced
- 1 Jalapeno, Seeded And Diced
- Salt And Pepper, to taste
- For the burgers:
- In a medium-sized saute pan, heat 2 tablespoons of olive oil over medium heat.
- Add jalapeno, red pepper, onion and garlic.
- Season with salt and pepper.
- Saute for 4 minutes, just until the veggies soften slightly.
- They will cook the rest of the way in the burger.
- Take off heat and set aside for a few minutes.
- In a large bowl, add the ground turkey, chipotle in adobo, cayenne, coriander, cumin, chili powder, Worcestershire sauce, Tabasco, and salt and pepper to taste.
- Add the veggies and grated cheese.
- Mix until combined and then form the mixture into patties.
- I usually get about 6 burgers.
- Fire up the grill or heat a cast iron pan over medium high heat.
- Cook for 4-5 minutes on each side.
- If you are feeling fancy, toast the burger buns.
- Top burgers with tomato, lettuce, and a generous amount of guacamole.
- Enjoy!
- For the guacamole:
- Use a knife to cut around the seed of your avocados and pull the halves apart.
- Remove the seed.
- Using a spoon, scoop out the inside of the avocados and place them in a large bowl.
- Start with 1 teaspoon of salt and 1/2 teaspoon of pepper and add it to your avocados.
- You may need more salt, but make sure you taste it first before adding more and over salting the dish.
- Avocados tend to need a healthy helping of salt.
- Add the lemon juice and Tabasco.
- Smash the avocado mixture until it becomes creamy but still remains slightly chunky.
- I use a pastry cutter, but a fork will work just fine.
- Add the minced garlic, onion and jalapeno to the avocado mixture and stir.
- Make sure you taste the mixture to see if it needs more salt, pepper or Tabasco.
- Refrigerate until youre ready to eat it.
