Strawberry Mousse

  1. Reserve several berries for garnish.
  2. Press remaining berries through a fine sieve.
  3. Add sugar and wine; stir well; chill.
  4. Soften gelatin in cold water.
  5. Add boiling water; stir to dissolve; cool.
  6. Combine gelatin and strawberry mixture; beat until fluffy and slightly thickened.
  7. Fold in whipped cream.
  8. Pour into non-stick 2 qt mold (or very lightly oiled one.)
  9. Chill at least 3 hours.
  10. Yield 8 servings.
