Ube Halaya
- 1 stick Butter, Unsalted
- 2 pounds, 3-13 ounces, weight Ube (Purple Yam/Garadu), Steamed And Mashed
- 13- 1/2 ounces, fluid Coconut Milk
- 1/2 cups Evaporated Milk
- 1/2 cups Sweetened, Condensed Milk
- Melt butter over medium heat and then add the rest of the ingredients and mix.
- Continue to heat over medium until you get the right jam consistency.
- It took me about an hour over medium heat.
- Put the mixture into a storage container and refrigerate until use.
- This is great in my Ube Coconut Rice Balls.
