Sig's Strawberry Tower

  1. Preheat oven to 200 C. .separate the eggs .
  2. Whisk the egg whites only with the salt until they are stiff.
  3. Make sure your bowl is clean and dry .
  4. Sieve the flour and stir in gently with a whisk
  5. Spread the dough onto a square or oblong baking tin, that has been lines with baking paper .Put immediately into the oven .
  6. Let it bake between 9 -12 minutes until it is golden brown let it cool
  7. Cut along the edge to remove the cake from the cake tin .
  8. Do this by turning it up side down .
  9. Peel away the paper .
  10. If it sticks spread the paper with a little water ,.
  11. Cut the cake into 18 pieces
  12. Clean 150 grams strawberries, take of the leaves and puree them to a juice with one teaspoon of vanilla sugar
  13. Whisk the cream until it is stiff add 1 teaspoon vanilla sugar.
  14. Mix the cream cheese under the cream
  15. Now lay out 6 of the cake pieces cover with sliced strawberries .then add 1 tablespoon puree cover with some of the cream mixture , either use spoon or piping bag
  16. Add another piece of cake on top repeat everything , strawberries, puree and cream .then cover one more time with puree then cream add some strawberries to the cream for garnish.
  17. You may use different cake tins
