Sig's Strawberry Tower
- 4 fresh eggs
- 1 pinch salt
- 150 grams castor sugar
- 100 grams plan flour
- 150 grams strawberries
- 1 tsp vanilla sugar
- 1 tsp vanilla sugar
- 250 grams thick , double or whipping cream
- 350 grams cream cheese
- Preheat oven to 200 C. .separate the eggs .
- Whisk the egg whites only with the salt until they are stiff.
- Make sure your bowl is clean and dry .
- Sieve the flour and stir in gently with a whisk
- Spread the dough onto a square or oblong baking tin, that has been lines with baking paper .Put immediately into the oven .
- Let it bake between 9 -12 minutes until it is golden brown let it cool
- Cut along the edge to remove the cake from the cake tin .
- Do this by turning it up side down .
- Peel away the paper .
- If it sticks spread the paper with a little water ,.
- Cut the cake into 18 pieces
- Clean 150 grams strawberries, take of the leaves and puree them to a juice with one teaspoon of vanilla sugar
- Whisk the cream until it is stiff add 1 teaspoon vanilla sugar.
- Mix the cream cheese under the cream
- Now lay out 6 of the cake pieces cover with sliced strawberries .then add 1 tablespoon puree cover with some of the cream mixture , either use spoon or piping bag
- Add another piece of cake on top repeat everything , strawberries, puree and cream .then cover one more time with puree then cream add some strawberries to the cream for garnish.
