Baked Beans
- 1 lb. navy beans
- 1/4 lb. salt pork
- 3 or 4 slices bacon
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 2 Tbsp. catsup
- 3 Tbsp. heaping brown sugar
- 1 Tbsp. wet mustard
- 3 Tbsp. molasses
- 2 Tbsp. honey
- 1 medium chopped onion
- Add 6 cups cold water to beans; bring to boil, then simmer 2 minutes.
- Remove from heat, cover tightly and let stand 1 hour. Add salt pork; let boil, then simmer 1 hour.
- Drain; keep juice. Take out salt pork to taste.
- Mix in saucepan, tomato sauce, paste, catsup, brown sugar, mustard, molasses, honey and onion. Mix with beans.
- Place bacon in baking dish, then pour in bean mix.
- Add 3 or 4 tablespoons bean water.
- Cover with foil with 1 air hole.
- Bake at 275u0b0 for 5 to 6 hours.
- After 2 1/2 hours, check and add bean water.
