Spinach Salad With Parsley Mayonnaise

  1. Arrange spinach leaves on 4 salad plates.
  2. Top with onion rings, pepper rings and hard boiled eggs.
  3. In a blender or food processor, combine mayo, yogurt, scallions, garlic, capers, mustard, vinegar and parsley.
  4. Puree until smooth.
  5. To serve, arrange tomato slices in a scallop around each plate.
  6. Serve dressing over salad.
