Light Creamed Spinach

• 14 cup chopped onion
• 12 tablespoon olive oil
• 4 cups raw spinach
• 1 teaspoon imitation bacon bits
• 1 tablespoon light sour cream
• 1 tablespoon light cream cheese
• grated fresh nutmeg

1. Caramelize onion in heated oil.
2. Add in spinach and bacon bits.
3. As spinach cooks down, add in sour cream and creamed cheese.
4. Grate a little fresh nutmeg.
