Curry Chicken Salad
- 1 tablespoon Dijon mustard
- 34 cup mayonnaise (I use light)
- 18 teaspoon salt
- 34 teaspoon curry powder
- 4 cups chopped chicken, cooked (I use Trader Joes fresh grilled chicken)
- 14 cup celery, slice
- 13 cup raisins
- 2 tablespoons green onions, sliced
- 13 cup slivered almonds, toasted
- green grape, cut in two
- Combine 2 T juice drained from pineapple with mayo, mustard, curry, and salt -- set aside.
- Mix chicken with remaining ingredients, add mayo mix and blend -- .
- If you're cooking your own chicken this will take longer.
- Otherwise it's very quick and easy.
