Summer Pea and Radish Pitas

  1. Bring vinegar, 1/4 cup water, and sugar to a boil.
  2. Remove from heat, and pour over onion slices in bowl.
  3. Let stand 15 minutes.
  4. Drain onion, and set aside.
  5. Reserve vinegar.
  6. Meanwhile, bring medium saucepan of salted water to a boil.
  7. Add peas.
  8. When water returns to a boil, blanch 2 minutes.
  9. Drain, and rinse peas under cold water.
  10. Drain, and set aside in colander.
  11. Whisk 3 Tbs.
  12. reserved onion-vinegar liquid with oil in large bowl.
  13. Add onions, peas, pea shoots, radishes, and sunflower seeds, and toss to coat.
  14. Spread each pita half with 2 Tbs.
  15. cream cheese.
  16. Fill each with 1 heaping cup pea mixture.
