No Sake or Mirin Needed! Make Your Own Mentsuyu

  1. Combine all the ingredients except the honey, and let sit overnight.
  2. Heat the mixed ingredients and bring to a boil.
  3. Once the smell of alcohol disappears from the steam, remove from heat and strain.
  4. Using a tea strainer, strain once more, and transfer to a bottle sterilized with boiling water, and store in the refrigerator.
  5. Add honey to taste.
