Man's twice baked potatoes
- 10 medium potatoes
- 12 oz shredded cheddar
- 8 oz sour cream
- 2 packages REAL bacon bits
- 1 packages dry ranch mix
- 1/3 cup milk
- 1/2 stick butter
- 1 chopped chive
- Preheat oven 500F
- Bake potatoes for 20-30 minutes or until soft inside.
- (Stab with fork to check)
- While potatoes are cooking combined milk, butter, 4 -6 oz sour cream, dry ranch mix, 1 pouch REAL bacon bits, 4-6 oz cheese and some chive (to your liking) in larger mixing bowl.
- Mix while (I use hand held elect.
- Beater) about 2 min.
- After potatoes are fully cooked, let cool about 10 minutes.
- Change oven setting to 350F
- After cooled, cut in half and spoon out meat (middle white part) into mixing bowl with the rest of ingredients.
- Try not to tear skins.
- Place skins onto baking sheet
- Beat potato meat into mixture until your liking.
- (Add more milk, butter or sour cream if you desire)
- Spoon potato mix back into skins (slightly monded).
- Top with remaining cheese, bacon bits and chive(to your liking).
- Bake potatoes again at 350F for about 10-20 min.
- (reheated)
