Slow Cooker Zesty Lentil & Spinach Soup
- 1 cup carrot, shredded
- 1 cup celery, diced
- 1 large onion, chopped
- 1 tablespoon olive oil
- 6 cups boiling water
- 1 (16 ounce) jar salsa, medium-hot
- 1 14 cups dried lentils, rinsed well
- 34 teaspoon salt
- 1 (10 ounce) package fresh spinach, torn
- In the bottom of a crock pot, place carrots, celery, onion and oil.
- Add the salsa, lentils and salt.
- Pour boiling water over all.
- Set crock pot to cook for 6 hours.
- Before serving, stir in spinach.
- Cook about 10 minutes more or until spinach is wilted.
