BLT Pasta
- 2 cups uncooked dried mini rotini or fusilli pasta
- 2 Land O Lakes Garlic & Herb Saute Express squares
- 1 pound boneless skinless chicken breasts
- 1/2 cup ranch dressing
- 10 slices bacon, cooked, chopped
- 2 cups grape or cherry tomatoes, cut in half
- 2 cups fresh baby spinach leaves, coarsely chopped
- Cook pasta according to package directions; drain.
- Melt 2 Saute Express squares in 12-inch nonstick skillet over medium-low heat just until bubbles begin to form.
- Add chicken.
- Saute 13-18 minutes or until chicken reaches at least 165F, is golden brown on both sides and juices run clear when pierced with a fork.
- Remove from skillet.
- Cut into bite-sized pieces.
- Add pasta, salad dressing, bacon and tomatoes to skillet; stir until heated through.
- Toss in chicken and spinach to coat.
