Philly Croque Monsieur

  1. Spread bread both sides with butter.
  2. Trim crusts and cut each slice into quarters.
  3. Top 24 bread squares with ham and Gouda cheese to cover.
  4. Spread remaining bread pieces with 1/2 tsp mustard and place mustard side down over Gouda.
  5. Place sandwiches in a single layer on an oven tray and grill under a hot grill for 2 minutes each side or until lightly golden.
  6. Spread Philly* on top of each sandwich and grill a further 2 minutes or until softened.
  7. Serve topped with chives.
