Spinach Salad
- 4 slice bacon
- 1 small onion
- 4 tbsp mayonaise
- 4 tbsp sugar
- 4 tbsp wine vinegar
- 1 packages spinach (about 16 oz.)
- 2 tbsp flour
- Fry the bacon to crisp and remove from pan to drain and cool.
- Fry thinly sliced onion in bacon grease until clear.
- Remove onion to cool.
- Add the flour to the bacon fat and blend over low heat.
- In a separate bowl mix mayo, sugar and vinegar until smooth.
- Then add bacon/flour mixture and blend until smooth.
- Put spinach into serving bowl.
- Top with crumbled bacon and onions.
- Pour sauce over top when ready to serve.
- It is quite all right if sauce is still hot.
- May season to taste including adding hot sauce.
