Mixed Rice Salad Recipe

  1. Bring water to a boil.
  2. Add in rice and return to boil.
  3. Cover and cook over low heat till water is absorbed and rice is tender (approximately 30-45 min).
  4. Uncover and let rice cold to room temperature.
  5. Fluff rice with a fork, then stir in mayonnaise, yogurt, onion and parsley.
  6. Season to taste.
  7. Pour mix into salad bowl and place vegetables on top.
  8. Refrigeratetill serving time.
  9. Mix at table.
  10. Serves 6.
