- 1 cup rice flour
- 1 teaspoon baking powder
- 1 pinch salt
- 2 egg whites
- 34 cup water
- pepper (don't be afraid to add a little kick)

- It makes enough for about 2 pounds of fillets.
- Mix the ingredients well in a bowl ensuring all the lumps have been removed.
- Pat fish dry before dipping in the batter.
