Couscous Tabbouleh

  1. Heat the chicken stock to boiling.
  2. Pour over couscous and let sit, covered, for 10 minutes.
  3. Fluff with a fork.
  4. Add lemon juice, oil, salt and pepper; mix well.
  5. Let cool, covered, for 1 hour.
  6. Add remaining ingredients and mix well.
  7. Season to taste.
