Couscous Tabbouleh
- 1 cup couscous
- 1 12 cups chicken stock
- 14 cup lemon juice
- 14 cup olive oil
- 12 teaspoon salt (or to taste)
- 14 teaspoon pepper
- 1 cup minced scallion
- 1 cup chopped fresh mint leaves
- 1 cup chopped parsley
- 2 cups cherry tomatoes, cut in half
- Heat the chicken stock to boiling.
- Pour over couscous and let sit, covered, for 10 minutes.
- Fluff with a fork.
- Add lemon juice, oil, salt and pepper; mix well.
- Let cool, covered, for 1 hour.
- Add remaining ingredients and mix well.
- Season to taste.
