Pesto Cheese Phyllo Bites

  1. Preheat oven to 325 degrees.
  2. Place phyllo shells on a large parchment-lined baking sheet.
  3. For the custard filling, in a mixing bowl, combine goat cheese, cream cheese, pesto, egg, and flour.
  4. Beat with an electric hand mixer on medium speed until smooth.
  5. Spoon mixture into phyllo cups, using scant 1 or 2 teaspoonfuls of mixture for each cup.
  6. Bake for 15 to 18 minutes or until shells are lightly browned.
  7. Garnish with a dollop of pesto, sweet bell peppers and basil.
  8. Serve warm and enjoy!
