Pesto Cheese Phyllo Bites
- 30 whole 1 3/4-inch Baked Minature Phyllo Shells (two 2.1 Ounce Packages)
- 4 ounces, weight Garlic Herb Goat Cheese, Softened
- 3 ounces, weight Cream Cheese, Softened
- 2 teaspoons Pesto (homemade Or Store Bought)
- 1 whole Egg
- 1 teaspoon All-purpose Flour
- 2 Tablespoons Pesto, For Topping
- 1/4 cups Sweet Bell Pepper, Finely Diced
- 3 Tablespoons Fresh Basil, Finely Chopped
- Preheat oven to 325 degrees.
- Place phyllo shells on a large parchment-lined baking sheet.
- For the custard filling, in a mixing bowl, combine goat cheese, cream cheese, pesto, egg, and flour.
- Beat with an electric hand mixer on medium speed until smooth.
- Spoon mixture into phyllo cups, using scant 1 or 2 teaspoonfuls of mixture for each cup.
- Bake for 15 to 18 minutes or until shells are lightly browned.
- Garnish with a dollop of pesto, sweet bell peppers and basil.
- Serve warm and enjoy!
