Molded Grapefruit Salad

  1. In a mixing bowl, combine grapefruit sections and 3/4 cup of the sugar.
  2. Set aside.
  3. In a small mixing bowl, combine gelatin and 1/2 cup of the cold water.
  4. Let stand 5 minutes.
  5. Meanwhile, in a medium saucepan, combine the remaining sugar and remaining cold water.
  6. Heat and stir until sugar dissolves.
  7. Add gelatin mixture; grapefruit mixture; nuts; and, if desired, food coloring.
  8. Cook and stir until sugar is completely dissolved.
  9. Pour grapefruit mixture into a 2-quart mold or square baking dish.
  10. Cover; chill at least 6 hours.
  11. If using mold, unmold salad.
  12. Serve with whipped cream, if desired.
  13. Garnish with grapefruit peel curls, if desired.
