Potato And Corn Chowder Recipe

  1. Chop onion and celery.
  2. In a soup pot, heat butter over medium heat.
  3. Add in onion, celery and minced green pepper.
  4. Cook, stirring till onion has softened, about 5 min.
  5. Meanwhile, peel potatoes and cut into cubes.
  6. Add in chicken broth and potatoes to the pot.
  7. Bring to a boil, reduce heat and simmer till potatoes are cooked through 25 to 30 min.
  8. Stir in corn and lowfat milk.
  9. Increase heat to high and bring to almost a boil, about 3 min.
  10. Serve sprinkled with the parsley.
  11. Makes 8 c..
