Spiced Wine with Cognac
- 5 1/4 cups red wine
- 1 teaspoon of whole cloves
- 1 teaspoon whole allspice
- 1/2 teaspoon cracked peppercorns
- 2 cinnamon sticks, broken into pieces
- 3/4 cup Cognac
- Pour the red wine into an enamel saucepan and add a spice bag containing the cloves, allspice, cracked peppercorns, and the cinnamon sticks.
- Let the mixture stand for 1 hour and bring it just to the boiling point, covered, over moderately low heat.
- Remove the pan from the heat and let the mixture stand, covered, for 5 minutes.
- Discard the spice bag and stir in the Cognac, warmed.
- Divide the spiced wine among six 10-ounce heat-proof mugs, rinsed with boiling water beforehand.
