Mini Egg and Bacon Pies

  1. Remove the crusts from the bread.
  2. Push bread gently into 8 x 1/2 cup capacity muffin pans to form a pastry case.
  3. Cook the bacon in a frying pan over medium heat until crisp.
  4. Divide evenly into cases.
  5. Combine cream cheese spread, eggs and evaporated milk until mixed and pour mixture into the bread cases.
  6. Bake at 180C for 10-15 minutes or until bread is golden and filling has just set.
  7. Serve warm or cold.
