Vegan Brownies

  1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, salt, plus walnuts and chocolate chips if using.
  2. In a blender, blend the soy milk, oil, tofu and vanilla.
  3. Add blended liquid to dry ingredients and stir until combined.
  4. The batter will be very thick.
  5. Spread evenly in a greased 8 inch square pan.
  6. Bake 35 minutes, or until edges are dry and centre is still moist-looking.
