Chicken & Potatoes in Creamy Chipotle Sauce

  1. Blend first 3 ingredients in blender until smooth.
  2. Cook chicken in Dutch oven or deep large skillet on medium heat 3 min.
  3. on each side or until browned on both sides.
  4. Remove from pan; discard pan drippings.
  5. Add potatoes and onions to pan; cook 3 min., stirring frequently.
  6. Return chicken to pan.
  7. Add chipotle sauce; stir to evenly coat.
  8. Cover.
  9. Cook on low heat 20 min.
  10. or until chicken is done (165 degrees F) and potatoes are tender.
  11. Top with cilantro.
