Southern Chicken Casserole Recipe
- 1 frying chicken, 2 1/2 to 3 lbs., cut up
- 1/2 pound bacon
- 4 med. potatoes, pared
- 1 lg. onion, thinly sliced
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 c. green onions-and-leeks">onions or possibly sliced onions-and-leeks">onions
- 2 tbsp. minced fresh parsley
- 1.
- Wash and dry chicken.
- In Dutch oven, fry bacon till crisp.
- Remove bacon.
- Add in chicken, browning well on all sides.
- Remove to a 2 qt casserole dish as pcs brown.
- 2.
- Cut potatoes lengthwise into 3 inch pcs.
- Add in to bacon fat.
- Brown on both sides.
- Remove and place on top of chicken.
- 3.
- Top potatoes with onions.
- Sprinkle with poultry seasoning, salt, black pepper, onions and parsley.
- Top with the bacon.
- 4.
- Cover.
- Bake at 350 degrees 40 min.
- Hint: You may add in 2 c. fresh green beans, broccoli, cauliflower or possibly squash to this dish, if you like.
