No Oil Chocolate Banana Muffins With Peanut Crumble
- 3 cups flour
- 1 cup white sugar
- 12 cup brown sugar
- 12 cup baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
- 12 teaspoon baking powder
- 2 23 cups mashed ripe bananas
- 23 cup unsweetened applesauce
- 2 eggs
- 4 tablespoons butter
- 12 cup rolled oats
- 12 cup crushed salted peanuts
- 12 brown sugar
- Preheat oven 350 degrees.
- Combine the first 7 dry ingredients.
- Mix together and make a well in the middle of the mixture.
- Then in a separate bowl mix together bananas, apple sauce, and eggs (make sure the bananas are really mixed well, not big lumps).
- Pour the banana mixture into the well in the dry mixture.
- Hand mix everything together until completely combined.
- Melt butter.
- Then add in brown sugar.
- Stir and pour in the oats and peanuts.
- Mix together.
- Make sure that the crumble is really coated in the sugar and butter, if not add a little more of each, making it just right.
- Grease the muffin tins with butter.
- Place batter in each muffin tin a little more than half way.
- Sprinkle with a generous tablespoon of crumble; press gently into batter so the topping will stick.
- Bake for around 20-25 min or until a cake tester comes out clean.
- Let cool for about 10 min then -- EAT!
