Cumin Scented Black Beans and Quinoa
- 2 teaspoons vegetable oil
- 1 red bell pepper, chopped
- 1 12 cups chopped onions
- 1 cup quinoa, rinsed
- 2 teaspoons ground cumin
- 12 teaspoon dried chipotle powder
- 2 cups vegetable broth
- 1 (16 ounce) can black beans, drained and rinsed
- In a medium saucepan, heat oil.
- Add pepper and onions; cook stirring for 5-6 minutes or until slightly softened.
- Stir in remaining ingredients except beans.
- Reduce heat to medium low and simmer 12-15 minutes or until quinoa is barely tender.
- Stir in beans.
- Fluff with a fork.
