Beet, Goat Cheese, Mint and Sweetcorn Wrap
- 1 flour tortilla
- 2 ounces soft fresh goat cheese
- 3 baby beets, quartered
- 1 tablespoon sweetcorn
- 12 tablespoon mint, freshly chopped
- Place a tortilla wrap, heated according to pack instructions, on a board and crumble the goat cheese in a thick line down the centre.
- Top with the beets, sweetcorn and mint.
- Roll up the wrap and serve.
