Asparagus, Egg And Cheese Casserole Recipe
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp dry mustard
- 1/2 tsp salt Pepper
- 4 x hard-cooked Large eggs
- 1 1/2 c. lowfat milk
- 1/2 c. grated cheese
- 1 bn fresh asparagus, cooked or possibly 1 med. can (can use broccoli)
- 1/2 c. crushed chips or possibly bread crumbs
- Make cheese sauce by melting butter, adding flour, mustard, and salt.
- Add in lowfat milk, 1/2 c. at a time, and bring to a boil.
- Then add in cheese and immediately remove from heat.
- Stir till cheese has melted.
- Taste and season.
- Place thin layer of sauce on bottom of oven-ware dish and put asparagus on top, then sliced Large eggs.
- Continue to layer.
- Cover with chips or possibly crumbs.
- Bake at 370 degrees for 20-30 min or possibly till all ingredients are warm and topping golden.
- 4-5 servings.
