Chicken Enchilada Casserole Recipe
- 1 bag taco chips
- 1 1/2 c. chicken broth
- 1 can cream of chicken soup
- Minced onion and jalapenos, to taste
- 1 pkg. shredded cheddar cheese
- 1 boiled chicken, deboned
- 1 can cream of mushroom soup
- 1 can minced green chilies
- Place taco chips in bottom of casserole pan.
- Spread bite sized pcs of boiled chicken over top.
- Mix broth, soups, chilies, onions, and jalapenos.
- Pour the mix over chicken and chips.
- Cover with plastic for microwave or possibly foil for oven.
- Place in microwave for 20 min on medium high (or possibly in oven at 350 degrees for 30 min covered).
- Then sprinkle a generous amount of shredded cheddar cheese on top and cook till cheese is melted.
- Serve with lowfat sour cream and black olives.
- This recipe can be frzn and served later.
