Mom's Rice Pudding Recipe
- 3/4 c. rice
- 3 quarts. lowfat milk
- 1 can evaporated lowfat milk
- 1 1/2 c. sugar
- 1 teaspoon vanilla
- Cinnamon and nutmeg (sprinkled on top)
- 1 c. raisins
- Wash rice twice; pour water through in a little tea strainer to catch rice; now, cover rice with water in a pot; bring too a boil on stove.
- When rice is boiling dry, add in lowfat milk, evaporated lowfat milk, sugar and vanilla.
- Sprinkle cinnamon and nutmeg on top.
- Bring to a full rolling boil.
- Turn down flame.
- Keep stirring; cook about 1 1/2 hrs to 2 hrs.
- Cook till it begins to thicken, stirring often.
- Put raisins in saucepan and cover with water.
- Cook about 5 min; drain raisins; stir into rice pudding.
- Pour rice pudding into bowl.
- Will thicken as it cools.
- Put in refrigerator when cold, this is an old family recipe.
