Banh Mi Spiral-Cut Hot Dogs Recipe
- 2 to 3 large carrots, peeled and coarsely grated
- 1 small daikon, peeled and coarsely grated
- 1 English cucumber, peeled, seeded, and coarsely grated
- 2 tablespoons kosher salt
- 6 tablespoons sugar
- 1 cup rice vinegar
- 1 or 2 serrano chiles, stemmed, halved lengthwise, and seeded
- Pickled vegetables
- 1/2 bunch fresh cilantro, roughly chopped
- 4 grilled spiral-cut hot dogs
- 4 hot dog buns
- Mayonnaise
- Sriracha hot sauce
- In a large bowl, toss the carrots, daikon, and cucumber with the salt.
- Let stand for 1 hour.
- Drain, squeezing the vegetables to get rid of their excess water.
- Put the vegetables in a zipper-top plastic bag.
- In a small bowl, whisk together the sugar and rice vinegar until the sugar is completely dissolved.
- Add the vegetables, along with the chiles.
- Seal the bag, squeezing any air out.
- Let stand at least 1 hour.
- The longer the vegetables marinate, the more pickled theyll taste.
- Place the grilled hot dogs in the buns.
- Build your dog.
