Tropical Citrus Shrimp

  1. Heat large covered saucepot of water to boiling on high.
  2. Fill large bowl with ice and water.
  3. Add shrimp to boiling water; cook 1 to 2 minutes or until just opaque throughout.
  4. Drain; transfer to bowl of ice water.
  5. Let stand until cold.
  6. Drain well.
  7. Cut shrimp into 1/2-inch pieces.
  8. Transfer to large bowl; stir in fruit juices.
  9. Cover and refrigerate 30 minutes.
  10. Stir in mango, jicama, onion, cilantro, jalapeno, avocado, oil, and 1/2 teaspoon each salt and freshly ground black pepper.
  11. Cover and refrigerate 30 minutes longer.
  12. Serve with tortilla chips.
