Glazed Sweet Potatoes Recipe
- 6 med. sweet potatoes
- 1/4 c. packed brown sugar
- 1/4 c. honey
- 1 tbsp. cornstarch
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoon orange rind, grated
- 2 tbsp. butter
- 1/2 c. pineapple juice
- 1/4 c. minced walnuts, optional
- Cook sweet potatoes, covered 20-25 min.
- When cold to the touch, peel and cut into 1/2 inch slices.
- Arrange slices in slightly greased 12 x 8 x 2 inch baking dish.
- Set aside.
- Combine brown sugar and next 7 ingredients in a saucepan.
- Cook over medium heat, stirring constantly till mix boils.
- Boil 1 minute, stirring constantly till mix is thickened and bubbly.
- Pour over sweet potatoes.
- Sprinkle with minced walnuts, if you like.
- Cover and chill 8 hrs.
- Remove and let stand 30 min.
- Uncover and bake 30 min at 350 degrees till heated.
