Glazed Sweet Potatoes Recipe

  1. Cook sweet potatoes, covered 20-25 min.
  2. When cold to the touch, peel and cut into 1/2 inch slices.
  3. Arrange slices in slightly greased 12 x 8 x 2 inch baking dish.
  4. Set aside.
  5. Combine brown sugar and next 7 ingredients in a saucepan.
  6. Cook over medium heat, stirring constantly till mix boils.
  7. Boil 1 minute, stirring constantly till mix is thickened and bubbly.
  8. Pour over sweet potatoes.
  9. Sprinkle with minced walnuts, if you like.
  10. Cover and chill 8 hrs.
  11. Remove and let stand 30 min.
  12. Uncover and bake 30 min at 350 degrees till heated.
