Glazed Chicken
- 6 boneless chicken breasts.
- 1/2 cup thinly sliced onions
- 1/3 cup broccoli flowers
- 1/2 cup chopped beans
- 1/3 cup diced potatoes
- 1/2 cup chopped onion stalk/stems
- 2 tbsp lemon juice
- 1 ginger chopped
- 2 tbsp mustard paste
- 4 tbsp honey
- 1 tsp red chilli flakes
- 6 tbsp orange juice
- 2 tbsp black pepper
- 1 tsp vinegar
- 1 Salt as per taste
- 1 cup orange juice
- 1/2 tsp red chilli flakes
- 2 tbsp honey
- 2 tsp mustard paste
- In a bowl,mix ginger,salt,mustard paste,orange juice,black pepper,vinegar,red chilli flakes,honey & lemon juice.
- Marinate Chicken in this mixture for an hour.
- Preheat the oven to 200C (400F).
- Heat a non-stick pan.Add onions,beans,potatoes,broccoli,onion stems to it & roast for 2 minutes.
- Spread the vegetables in a baking tray.Keep the marinated chickens with the marinade on these vegetables.Cook in the oven till done.
- Meanwhile,mix orange juice,red chilli flakes,honey & mustard paste in a bowl.Cook it in a pan till reduced to half the original quantity.
- Mid-way through the baking,glaze the chicken with this mixture & continue till the chicken is cooked.
