Southern Fried Green Tomatoes With Shrimp and Tomato Relish
- 4 slices green tomatoes (i/2 inch slices)
- 1 cup flour, seasoned with
- salt & pepper
- 2 cups vegetable oil
- 8 large shrimp, peeled & deveined
- 2 garlic cloves, minced
- 1 ripe tomatoes, diced
- 1 tablespoon butter
- 12 red onion, diced
- 1 tablespoon basil leaves, sliced
- salt & pepper
- 4 slices fresh mozzarella cheese (1/2 inch)
- It is best to make the relish first, to allow the flavours to marry.So combine the diced red tomato, onion, basil, 2 Tbsp olive oil, salt & pepper to taste.
- Dredge the green tomato slices in the seasoned flour.
- On med high, heat the oil in a heavy pan .Fry the tomato slices for approx 2 mins a side.Remove from pan and drain on paper towels.
- Season shrimp with salt & pepper.
- saute in a hot non stick pan for 2 minutes, Lower the heat to med and add the garlic and 1 Tbsp butter.
- Stir for 1 min and remove from heat.
- Place the tomato slices on plates, top with the mozzarella cheese, sauteed shrimp and the tomato relish.
- Drizzle some juice from the relish around the plate.
