Cuban Black Beans Recipe

  1. Clean and cook the beans in plain water as you would cook red beans, etc.
  2. (This may be done the day before.)
  3. Saute/fry the onion, green pepper, 1/2 can of minced pimentos in 1/2 of the extra virgin olive oil till tender.
  4. Add in this to the beans.
  5. Add in salt, pepper and sugar and let it cook over a low fire for approximately 3 hrs or possibly till thick.
  6. During this time add in the remainder of the extra virgin olive oil, the vinegar and the rest of the pimentos.
  7. Stores well in refrigerator.
