Cuban Black Beans Recipe
- 1 pound black beans
- 1/2 pound green pepper, minced
- 1/2 pound onions, minced
- 1 can pimentos, minced
- 3/4 c. extra virgin olive oil
- 1/3 c. vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- Clean and cook the beans in plain water as you would cook red beans, etc.
- (This may be done the day before.)
- Saute/fry the onion, green pepper, 1/2 can of minced pimentos in 1/2 of the extra virgin olive oil till tender.
- Add in this to the beans.
- Add in salt, pepper and sugar and let it cook over a low fire for approximately 3 hrs or possibly till thick.
- During this time add in the remainder of the extra virgin olive oil, the vinegar and the rest of the pimentos.
- Stores well in refrigerator.
