Citrus Chicken Stir-Fry
- 1 bunch broccolini
- 2 tbsp. peanut or vegetable oil
- 1 lb. boneless chicken stir-fry strips
- 1 large red bell pepper
- 1/2 c. bottled citrus stir-fry sauce
- 1 package shredded carrots
- Trim 1 inch off stem ends of Broccolini spears.
- Bring a large pot of lightly salted water to a boil.
- Add Broccolini; blanch 2 minutes; drain in colander and refresh under cold running water.
- In a wok or large, deep skillet, heat 1 Tbsp of the oil.
- Add chicken and stir-fry over high heat for 1 1/2 minutes or until no longer pink; remove to a plate.
- Add remaining oil to wok and, over high heat, stir-fry pepper strips 1 minute or until very crisp-tender.
- Add sauce, Broccolini, carrots, and chicken; cook 30 seconds longer.
- Serve over rice noodles, if desired.
