Nadine'S Beet Cake
- 1 c. fork-stirred all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 c. sugar
- 1/2 c. corn oil (vegetable oil is okay)
- 1 tsp. vanilla
- 2 large eggs
- 1 c. beets (fresh, cooked and shredded)
- 1/2 c. chopped walnuts
- Sift together flour, baking soda, baking powder, salt and cinnamon.
- Beat together sugar, oil and vanilla until blended. Beat in eggs, one at a time, until blended.
- Stir in flour mixture, a little at a time, until smooth.
- Stir in beets and walnuts.
- Turn into an oiled 8 1/2 x 4 1/2-inch loaf pan.
- Bake in preheated 350u0b0 oven until done, circa 1 hour.
- Loosen edges and turn out on a rack.
- Place cake in a plastic bag and let stand overnight at room temperature.
