Crab and Goat Cheese Mashed Potatoes

  1. Preheat oven to 350.
  2. Bring a large pot of water to a boil.
  3. Add the potatoes, garlic, and salt, cooking until potatoes are fork-tender (about 10 min).
  4. Drain.
  5. Force the potatoes, garlic, and butter through a ricer.
  6. Add salt and pepper to taste.
  7. Sppok the puree into a 3 or 4 quart casserole dish.
  8. Bake for 20 minutes.
  9. Sprinkle crab over the potatoes, then sprinkle with goat cheese.
  10. Return to oven, bake for 10 minutes or until hot and bubbling.
