Pumpkin-Apple Quick Oatmeal
- 1 13 cups water
- 23 cup apple juice
- 12 cup canned pumpkin
- 13 cup snipped dried apple
- 1 14 cups quick-cooking rolled oats
- 1 tablespoon packed brown sugar
- 1 teaspoon ground cinnamon
- 14 teaspoon ground nutmeg
- 12 cup plain fat-free yogurt
- ground cinnamon
- honey
- pumpkin seeds
- In a medium saucepan combine the water, apple juice, pumpkin, and dried apples.
- Bring to boiling.
- Meanwhile, in a small bowl stir together the oats, brown sugar, 1 teaspoon cinnamon, and nutmeg.
- Stir oat mixture into boiling pumpkin mixture.
- Cook for 1 minute, stirring occasionally.
- Top each serving with yogurt and additional cinnamon, honey, and pumpkin seeds.
- 168 calories, 2 g fat, 35 g carb, 4 g fiber per serving.
