Chicken Curry Recipe mama lynn

  1. Heat oven to 350 degrees.
  2. Place flour in a shallow baking or plastic bag.
  3. Season flour with salt, pepper along with a sprinkle of curry and thyme.
  4. Dredge chicken to coat lightly.
  5. In a large skillet, heat oil over medium heat.
  6. Add chicken and brown on each side, about 10 minutes.
  7. Do this in batches to not over crowd the pan.
  8. Remove chicken to paper towel to drain and place in a casserole pan.
  9. To the same skillet, add onions and garlic.
  10. Saute for 5 minutes.
  11. Add curry powder, thyme, nutmeg, salt and pepper.
  12. Stir to blend.
  13. Add tomatoes with juice and simmer for 5 minutes.
  14. Pour the tomato and onion sauce over the chicken and bake uncovered for 20 30 minutes until chicken tender and cooked through.
  15. During the last 5 minutes of baking, remove casserole from the oven, stir in raisons and return to the oven to finish cooking.
  16. Garnish with parsley and almonds.
  17. Serve over rice.
