Oman Zucchini Spinach Soup
- 1 lb zucchini, grated
- 2 onions, chopped
- 12 lb Baby Spinach, chopped thin strips
- 2 chicken thighs
- 6 cups chicken broth
- 1 teaspoon cumin
- 12 cup brown rice
- 3 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon pepper
- add chicken.
- add rice.
- add broth add seasoning
- simmer 40 minutes debone and chunk chicken
- in another pan saute onions in butter til golden add zucchini cook
- then add spinach cook just until wilted add to soup serve.
